What’s your idea of comfort food? Mine is pasta and my lifelong love affair with it shows no sign of slowing down. If anything it just gets stronger and stronger. It’s my go-to food when I have to cook, it’s filling and it *can* be healthy too. Travelling around Italy so much is probably part of the reason why I love it even more so. Whilst on my travels I’ve picked up so many tips about the best way to cook it, and what sauces are the easiest to whip up with it. The possibilities are endless!
Baking cakes for a living means I’m in the kitchen a lot, especially during wedding season. It also means that once I’m finished working on a cake order I don’t want to carry on cooking for long periods of time. I simply don’t have the energy. If you read one of my latest blog posts then you’ll know that I made the decision to have a clearer August along with a much simpler look on life. You’ll also know that I’m trying to do a little bit more of what I love – and that involves cooking.
I’ve taken a bit of a back-step lately with cooking at home and haven’t been eating as well as I usually would. When HelloFresh asked me to be involved with recreating one of their recipes I knew that this was the perfect opportunity to get me back in the kitchen and the first step to being able to love cooking again.
Chopping up fresh basil and juicy tomatoes, smelling the garlic and squeezing lemons whilst sipping on a fantastic bottle of red wine certainly reminded me of how much fun cooking can be.
I think HelloFresh is pretty well-known for their ingredients box service (get £10 off your first four boxes here). But even if you don’t want to order an ingredients box, it’s worth checking out the website for recipe inspiration too. HelloFresh has an amazing selection of recipes on their website and whilst reading the list and trying to choose which to cook, I bookmarked quite a few.
Every recipe I glanced at looked so delicious but the Gnocchi Primavera stood out the most because it also looked exceptionally simple!
As a busy Mum with little time to cook quick meals are my go-to. My time, energy, (and patience) are often stretched thin and rather than feel guilty about not whipping up something fancy, pasta dishes like this Gnocchi Primavera from HelloFresh tend to solve that and everyone ends up happy.
Using lots of fresh cherry tomatoes means we all get an excellent source of vitamins A and C, along with a good kick of vitamin K and potassium. Win-Win!
Now because this all cooks very quickly, it’s absolutely worth getting all of your ingredients prepped and ready to go before you start. The steps on the HelloFresh site are very clear and the photos make it even easier to make sure you’re doing everything right. I tend to use other blogs and online recipes to cook new dishes and I don’t think I’ve come across many that have instructions which are as easy to follow as this one.
All it takes is a little bit of chopping, a small amount of frying, and ten minutes on the hob – enough time to open a bottle of wine (chef’s rights) and clean up whilst it does its thing.

Beautifully pan-fried golden gnocchi, coated in the most beautiful creamy, fresh tomato, basil pesto inspired sauce – perfection! I think this will become a new regular dish and a firm favourite in our house now.
Serve with a twist of black pepper, a squeeze of lemon and a sprinkling of Basil you’ll almost be convinced you’re somewhere a lot nicer than rainy England.
