Easy Rolo Rocky Road Recipe

I know, I know, it’s the 14th January and I’m yet to publish anything on here for 2019! So, I’m starting off with something very nice looking, something very simple and quite frankly, blooming delicious. Rolo Rocky Road’s, the answer to all those “I need to make something really quick that’s gonna fix this immense chocolate craving NOW” types of thoughts. I say now but they do take an hour to set… so just lick the spoon or the bowl while you’re waiting.

The wait is TOTALLY worth it, I promise you.

Now I’m very aware there’s nothing original about these babies, but that doesn’t matter. Everyone needs an easy Rocky Road Recipe in their lives and this one fits that job perfectly. It’ll be your new best friend… along with this Brownie recipe, this Blondie recipe… oh and probably this chocolate fudge cake recipe too.

I’ve been running around so much the last couple of weeks, but I do have a few other blog posts half-drafted, so I’ll be back on track soon. One includes lots of pizza, one includes an Honest Burger media-event I was invited to in Reading, another is a review of a vegan burger place and the other is about a new business I’m launching…all soon to be revealed!

Easy Rolo Rocky Road Recipe

Easy Rolo Rocky Road with rolo's, peanuts and digestive biscuits.

Prep Time 10 minutes

Additional Time 1 hour

Total Time 1 hour 10 minutes

Ingredients

• 300g milk chocolate
• 200g dark chocolate
• 85g peanuts, salted or unsalted
• 140g Digestive biscuits, crushed
• 5 tubes/packs of Rolo's

Instructions

1. Line an 8" square baking tin with greaseproof paper.
2. Melt the milk and dark chocolate in the microwave or on the hob in a bowl over a pan of water.
3. Leave to cool for 10 minutes
4. Add the roasted peanuts, crushed digestive biscuits and 4 tubes of Rolo's into the chocolate and stir until everything is covered.
5. Pour the chocolate mixture into the prepared tin and spread out into one smooth layer.
6. Add the last tube of Rolo's over the top evenly.
7. Refrigerate for at least one hour or until the chocolate is set.
8. Cut into small squares and serve.
9. Keep in the fridge in an air-tight container...if you can resist them for that long
