Reese’s Peanut Butter Cup Cookies

Scrolling through Pinterest yesterday morning I came across so many peanut related recipes and had the sudden urge to do something with the bag of Reese’s Cups my son bought me for Christmas. Makes a change to practically inhaling the full bag within 5 minutes too. Thank you, Coby!

I hope you’ve all had a lovely Christmas and that you’re all suitably relaxed, stuffed with chocolate, eaten shed loads of cheese and got to spend lots of quality time with your family and friends. I have!

It’s been a pretty quiet one so far for me. We go to New York in February so didn’t take our usual Christmas break away this year. We’re also spending New Year’s Eve at home which will no doubt be filled with board games and more food.

I’ve never really been that fussed about New Year’s Eve, to be honest, but I do look forward to that whole New Year, new start kind of feeling. I’m also not big on Christmas either, and the best thing for me is having some time off work and being at home. I’m no grinch though, I don’t hate it, I’m just far more low-key than others.

And I’m currently in that ‘what day is it today, shall I get dressed, let’s have two-to-three naps on the sofa‘ kinda state. It’s very confusing, but I’m not complaining. I love this time of year and having the chance to just do nothing and take some time out is heaven! I read a whole book today too… a very short book mind, Franny and Zooey to be precise, but it has reminded me I need to fit more time in for reading. There’s a big pile of books next to my bed, two I’m half-way through, the rest need to be started. I don’t really set new year resolutions, but if I did then reading more would be one of them.

Although, I haven’t baked as much as I usually would compared to previous Christmases. I kept meaning to, and had lots of things in mind I wanted to bake, but something either distracted me or I quite frankly couldn’t be bothered! When I did eventually wake up feeling quite energised and in the mood, for baking, I went for some simple easy to bake desserts.

First Up…

I’ve always been a big peanut fan and love baking with them too. See this recipe here for ‘10 minute peanut butter cups‘. Peanuts bake well, never lose their flavour and I find them so more’ish too.

Recipe

90g Caster Sugar

90g Light brown sugar

120g Unsalted butter

90g Peanut butter

1 egg

2 tbsp Milk

1tsp Vanilla Extract

260g Plain Flour

1/2 tsp Salt

1 tsp Bicarbonate of Soda

1 bag of Reece’s Cups

Method

1. Preheat your oven to 180°C fan (Gas Mark 4). Pop your bag/packet of Reese’s Cups in the fridge to keep cool so they don’t melt later on.
2. Cream together the butter, sugars, and peanut butter until fluffy.
3. Beat in the egg, vanilla, and milk.
4. Add the sifted flour, salt, and baking soda and mix until you’ve got a nice dough.
5. Shape into small balls and place in very lightly greased mini cupcake tray. Don’t roll too big, see my photo below for size 🙂 I use this spray for pretty much everything and it’s fab!
6. Bake for 6-8 minutes in the middle of your oven (I baked for 6). Take your Reese’s Cups out of the fridge and when you remove your cookies from the oven immediately press a mini Reese’s Cup into each ball. Leave them to cool for around 15 minutes then carefully remove from tray.
