Loaf cakes basically interpret as lazy cakes to me! I’m totally serious. They take minutes to whip up, there’s only one tin, minimal washing up and generally, they don’t need any decoration aside from a suitably tangy flavoured drizzle on top. Gin and Yuzu tonic drizzle cake may essentially have a couple more ingredients then usual loaf cakes do, but compared to the giant wedding and birthday cakes I’ve been creating lately they’re so so easy and always get eaten up super quick too.


I’ve had a bit of blogging crisis lately. Probably a combination of being over-worked, wedding season was manic and things just weren’t flowing as easily as they usually would. I was feeling deflated with my social media accounts, which is frankly a bit silly…as…well, it’s just social media! But, today I’ve had a really positive day and I’ve got a few collabs booked in too. Afternoon tea, a baking school visit, Christmas projects, a pizza masterclass! Basically lots of fun food stuff!
Just up my street.
Even more exciting is that I’ve booked a weeks-long holiday to New York, sent out some more brand pitches (had two accepted), got my tickets for Traverse (a blogging network/adventure event in Italy) and I’m feeling quite organised and on top of things.
Making plans and having something to look forward to is key to keeping me motivated I think. Work to live, not live to work right?
You may have spotted there have been quite a few gin inspired recipes on my blog lately. That’s because I recently created a selection of recipes for Fentimans and I’ve been sharing them on my blog since. In the interests of transparency, the did pay me, so this is essentially under the new recently updated advertising guidelines, an AD. However, I never work with any brand I don’t 100% admire and Fentimans genuinely have an innovative product, I love their brand, their ethos and everything about what they do. I’m always extremely honest with my opinions too.
Having this opportunity was just fantastic, but no, I don’t have a gin problem 😉
Anyway, I’ll move on to the juicy stuff and the reason you’re most likely here.
Here’s a fab recipe for a spectacularly delicious Gin and Yuzu tonic loaf cake. You can buy this Tonic in most supermarkets, I’ve seen it in all the big ones, Fentimans also have a stockists list on their website too. I found the Yuzu flavour to be very similar to lemons and limes, it’s citrusy but maybe a tiny bit sweeter.
